Rimon Buchshtav Kirsht’s White Chocolate Fudge

Their favorite dish: visiting Rimon and Yagev Buchshtav is so fun. Yagev's an amazing cook and Rimon does sweets, like white chocolate fudge

Yagev and Rimon were meant to be together. Even when they thought their paths would separate, they found themselves back together – it was because of their love of music. 34-year-old Yagev is a quiet, modest and curious person. Everything interests him. Poetry, music, philosophy, politics, and more. Yagev never stops expanding on his knowledge and interests. He is a gifted musician, who started his career studying cello and guitar. As an autodidact, he did not stop at formal music studies and taught himself to play the oud, flute, clarinet, and melodica to name a few. Any musical instrument is a new, magical and fascinating world in Yagev’s eyes.

36-year-old Rimon is a person who thrives when helping others. As a child, Rimon watched her parents and invested her time in learning everything related to plants. Whether helping in the garden at home, in the greenhouse of the kibbutz after school with her mother, or taking care of the vegetable garden of the school. When she grew up, Rimon studied psychology and various methods of treating the body and mind. Music has always been a significant part of Rimon’s life, as well, and she is responsible for the musical tastes at home. She always made CDs for the family with collections of bands she loved and songs that “everyone must know”.

It is so much fun to go visit Yagev and Rimon. Rimon spoils you and makes you feel special. The two always prepare a meal fit for a king, and Rimon has such an impressive memory that every visit she surprises her loved ones with dishes that they once told her they loved. Even if they forgot, Rimon remembers. Yagev is an incredibly talented cook. He and Rimon like to pickle any kind of food that comes along. When Rimon is in the kitchen alone, she devotes herself to sweets. She bakes excellent challah and babkas, desserts with chocolate and of course, her flagship candy – white chocolate fudge. She is always experimenting and brings the same fudge with different toppings – it’s always gone in seconds.

Yagev and Rimon, both children of the Gaza envelope, got married in Kibbutz Nirim and made their life there. They’ve never considered leaving. The two adopted five dogs and five abandoned and injured cats, cared for them and rehabilitated them.

Yagev and Rimon Buchshtav were kidnapped from their home in Kibbutz Nirim by Hamas. After 53 days in captivity, Rimon was returned.

Ingredients for White Chocolate Fudge

  • 1⅔ cups (400 grams) condensed milk sweetened
  • 14 oz (400 grams) white chocolate
  • a little Salt (preferably Maldon salt)
  • pistachio nuts Roasted and salted, or however you want
  • rose petals dried

Instructions

  • 1. Line an 7x7 inch (18x18 cm) mold with parchment paper (I used what was available and it was bigger so I doubled the recipe).

  • 2. In a medium saucepan over medium-low heat, melt the white chocolate and the condensed milk while stirring. As soon as everything melts, hurry to mix in the toppings and pour the mixture into the mold. If you cook it too long it will become difficult to work with.

  • 3. Spread the fudge in an even layer and sprinkle with salt flakes or whatever other topping you like. It is very sweet, so I highly recommend salty toppings. I added half a teaspoon of cardamom, 3.5 oz (100 grams) of roasted, salted pistachios, and decorated the surface with dried roses.

  • 4. Put in the fridge for three hours to set. Cut with a knife dipped in boiling water and wiped with a towel and serve. Store in a sealed box in the refrigerator and take out half an hour before you want to serve, to get back to the optimal texture.
