Gozleme – Savory Turkish Cheese Turnover

Be'eri Print and Foody Israel bring you "Shavuot of Longing" - the beloved dishes of those missing from this holiday. Here, Turkish Cheese Turnovers.

Gozleme is a savory Turkish turnover filled with cheese and sometimes spinach. It can easily be prepared in a frying pan; the dough is super easy to prepare and makes use of the wonderful attributes of yogurt. This dish arrived in Israel along with tourists returning from Turkey’s popular all-inclusive resorts.

Ingredients for Cheese Turnover

For the dough:

  • 10 oz (200 grams) natural yogurt 3% fat
  • 1½ cups (250 grams) flour
  • 1 pinch Salt

For the Filling:

  • 1 onion diced
  • 5 oz (100 grams) feta cheese crumbled

Instructions

Prepare the dough:

  • 1. In a mixer, combine the flour, yogurt and salt using a dough hook (kneading the dough by hand can do the trick as well). If the dough is sticky, add more flour. Place in the refrigerator, uncovered, for 10 minutes.

Prepare the filling:

  • 2. Warm the oil in a frying pan and fry the onions for 15 minutes until golden. Remove from the pan and let cool.

  • 3. In a mixing bowl, combine the onions, feta, and cheddar cheese.

  • 4. Divide the dough into 8 equal parts, and form each portion into the shape of a small ball.

  • 5. Dust a work surface with flour, and roll out each ball as thinly as possible

  • 6. Place the filling mixture on one half of the circle (approximately 1/8th of the mixture), fold one half of the dough over the other, and pinch firmly to close.

  • 7. Using a non-stick frying pan, heat a little oil, and gently fry, over medium heat, until golden on both sides.
