Dried Fruit Stuffed with Lamb

In Persia, dried fruits were served in all forms for Rosh Hashanah - they were expensive and symbolized the abundance in the New Year

I love the taste of dried fruits, their sweetness goes well with meat, so I stuff and roast them. It requires a little patience but it is very rewarding and gives new meaning to the blessing of abundance – an abundance of attention and a desire to give. You can prepare stuffed dried fruits a day in advance and heat them up before the meal.

Ingredients for Stuffed dried fruits

  • 15 Dates pitted
  • 15 Dried Figs partially cut open in the middle
  • 15 dried apricots partially cut open in the middle

For the filling:

  • 1.1 lbs (500 grams) lamb
  • 1/2 teaspoon ras el hanout
  • 1/4 teaspoon turmeric
  • 2 onions chopped
  • 1 cup parsley leaves chopped
  • 1/2 cup mint leaves chopped
  • 3 garlic cloves chopped

For the sauce:

  • 1/4 cup olive oil
  • 1 onion large, chopped
  • 3 cups water or chicken or beef stock
  • 1 teaspoon ground black pepper
  • lemon juice freshly squeezed, from one lemon
  • 3/4" (2 cm) ginger grated
  • 6 saffron threads
  • 2 bay leaves

Instructions

Prepare the filling and stuff the fruit:

  • 1. Grease a round pan. Mix all the filling ingredient well to combine. Fill the fruits with a good amount of the mixture so that the filling sticks out a little. Arrange the stuffed fruits in a round tray side by side in smaller and smaller circles, from the sides of the tray towards the center.

Prepare the sauce and grill:

  • 2. Heat the oven to 405F (200C) degrees. In a small pot heat the oil, add the onion, and fry about 8 minutes over  medium heat until the onion starts to brown, add the rest of the sauce ingredients, bring to a boil and cook for about 3 minutes. Pour the sauce over the stuffed fruits and put in the oven for an hour.
