Spicy Matbucha

Heat a pot over high heat, put the chopped tomatoes, garlic and peppers in it, and with a little patience you will have a delicious spicy matbucha

Ingredients for Spicy Matbucha

  • 4.4 lbs (2 kilograms) tomatoes red and ripe
  • 5 garlic cloves chopped
  • 5 dried red peppers
  • 5 hot peppers
  • 1 tablespoon (15 grams) Sugar
  • 1¾ teaspoons (10 grams) Salt
  • ¼ cup vegetable oil

Instructions

  • 1. Peel the tomatoes and chop.

  • 2. Place the chopped tomatoes and garlic in a pot over high heat. Cook until the tomatoes soften (at least an hour).

  • 3. In a food processor, grind the dried red peppers together with the hot peppers and add to the pot.

  • 4. Cook together for about an hour and then add the sugar, salt and oil and cook for another hour on low heat. Serve hot.
