Ingredients for Safra - Semolina Cake
- 1 cup (240 ml) oil
- 6 eggs
- 1 cup (240 ml) orange juice
- 4 cups semolina fine
- 1 cup (140 grams) flour
- ½ cup (65 grams) raisins
- 1 cup (85 grams) walnuts chopped
- ¼ (70 grams) Sesame seeds toasted
- 1 cup (200 grams) Sugar
- 1 grated orange peel from one orange
- 2 tablespoons (25 grams) Ground coconut
- 1½ tablespoons (20 grams) vanilla sugar (2 packets)
- 1½ tablespoons (20 grams) baking powder (2 packets)
For the syrup:
- 1 cup (200 grams) Sugar
- 2 cups (480 ml) water
- 1 lemon juiced
- 2 drops rosewater
Instructions

1. Heat the oven to 355F (180C) degrees.

2. Boil the syrup ingredients in a pot, lower the flame and cook for 5 minutes until the sugar dissolves.

3. Mix oil, eggs and orange juice in a bowl. Mix the rest of the ingredients in a separate bowl.

4. Add the oil mixture to the semolina mixture, stir to combine, pour into the pan and bake for 20 minutes until golden.

5. Cool slightly, cut into squares and pour the syrup over the cake.
