Ohad Ben Ami’s Favorite Sabrina

Their favorite dish: Ohad Ben Ami is a responsible, serious man, and one of the funniest people. Adi Shilon made him nostalgic Sabrina cakes

“I wish he was our family representative in matters to do with the hostages,” Ohad Ben Ami’s daughter, Ella, told me. “Whenever I have a problem, he is the first one I talk to. After he solves the problem, he’ll laugh or be sarcastic about it, to try to make me laugh too.”

Ohad is the accountant of Kibbutz Be’eri. On the one hand, he is a balanced, responsible and serious man, and on the other hand, he is one of the funniest people. During his military service, Ohad’s knee was seriously and he was moved to a soldiers’ hospital in Kirya. It was his biggest disappointment. He dreamed of being a soldier. When Ohad meets Ella’s partner, he always questions him about his military service, out of the endless love he has for his country. Every Saturday, Ohad and his friends go for a bike ride – it is a beloved ritual. They ride around the kibbutz, stop for coffee and talk about life. He always likes to say that his daughters and his wife are the center of his world. Recently, his mother also moved closer to the kibbutz, and he is devoted to her care taking.

He met Raz, the love of his life and a native of Kibbutz Be’eri, at the Meymadion waterpark where the two worked as lifeguards. Raz was then dating the boss and Ohad fought for her, until she fell victim to his charms. They started their life together in Modi’in, though when Kibbutz Be’eri called to inform them that a place had opened up for them, Ohad was quick to agree without even consulting Raz, who was born there. Ohad, who grew up in Ramat Gan, loves the kibbutz. He and Raz are happy to have raised their daughters there. Ella is sure that that is still the case.

Raz and Ohad Ben Ami were kidnapped on October 7th from their home in Kibbutz Be’eri by Hamas. After 54 days in captivity, Raz was returned.

Raz Ben Ami’s Stollen

Ingredients for Sabrina

  • 1/2 cup (125 grams) milk
  • 1½ tablespoon (15 grams) fresh yeast or 7 grams dry yeast
  • 1/2 cup (75 grams) flour
  • 3 eggs M
  • 1½ cups (225 grams) flour
  • 2 teaspoons (8 grams) Sugar
  • 1 teaspoon (4 grams) Salt
  • 1 teaspoon grated orange peel (optional)
  • 1/2 cup (125 grams) butter room temperature

For the syrup:

  • 3.2 quarts (3 liters) water
  • 6 pounds (2.7 kilograms) Sugar
  • 1 tablespoon vanilla extract
  • a little rosewater or orange blossom water
  • scant 1/2 cup (100 ml) rum liqueur or kirsch
  • 6 slices orange

Instructions

  • 1. Prepare the syrup: bring the water and sugar to a boil. Cook for about 5 minutes on medium heat, add the rest of the ingredients and cook for another 3 minutes.

  • 2. Bring milk just to a boil. Remove from the heat and cool until lukewarm.

  • 3. Add the yeast and the 1/2 cup (75 grams) of flour and mix. Cover with a towel and set aside to rise until doubled in size.

  • 4. In the bowl of a stand mixer fitted with the dough hook attachment, begin kneading the dough and gradually add the eggs.

  • 5. Add the flour, sugar, spices and salt and continue kneading for about 5 minutes.

  • 6. Add the butter and knead for an additional 5 minutes.

  • 7. Divide the dough into the compartments of a muffin tin - making sure not to go over half the height. The dough will double in size.

  • 8. Bake in an oven heated to 400F (200C) degrees until golden.

  • 9. Place orange slices in a jar, top with the still hot sabrinas, up to half the height of the jar (they increase in size) and fill the jar completely with syrup. Close tightly and keep in the fridge for up to a week, maybe a little longer. Serve with whipped cream and fruit of your preference.
