Ruthie Munder’s Famous Meringue Cake

Their favorite dish: Avraham and Ruthie are salt of the earth, love people, and their kibbutz Nir Oz. Adi Shilon made Ruthie's Meringue Cake

The whole kibbutz calls Avraham “Munder”, like his last name. 78 years ago Munder was born in Givatayim and grew up to be one of the founders of Kibbutz Nir Oz. Munder is married to Ruthie, father to Keren and Roy and loving grandfather to Ohad, his only grandchild. He is a patriotic, devoted and loyal kibbutznik. As the legendary manager of the “Nirlat” store (Israeli house paint company), Munder is an extremely hard worker. He also featured in the mythological “Nichochi Eshkol” choir and was known as a talented singer with a wonderful voice. Munder is a beloved man, who does not have a bad bone in his body.

He met his love, Ruthie Munder, 78, in the kibbutz and the two were married in 1966. Ruthie was born in Be’er Ya’akov and came to the kibbutz following her older sister Naomi. Ruthie, who has golden hands, is known in the kibbutz as a beautiful writer, a great baker, seamstress and someone who is talented in all her handicrafts. Her house is always orderly, beautiful and full of flowers. Ruthie is a smiling woman, who is always happy to give advice and generously gives compliments to any passersby. Munder loves to sing to her – “I have a girl and her name is Ruthie” – and she loves it when he sings. Avraham and Ruthie are salt of the earth. People who love people, who love the kibbutz even in difficult times, during previous conflicts with Gaza, and did not think of leaving it for a moment.

Ruthie and Avraham Munder’s daughter, Keren, and their grandson, Ohad, came to visit their grandparents for the holiday. The four of them were kidnapped by Hamas and taken to Gaza. Their son Roy Munder was murdered.

After 49 days in captivity, Ruthie was returned.

Ohad Munder-Zichri’s Favorite Warm Chocolate Cake

Ingredients for Meringue Cake

For the meringue:

  • 3 egg whites
  • scant 1 cup (180 grams) Sugar

For the cream:

  • 1/2 cup (100 grams) butter
  • 2 tablespoons cognac
  • 2 eggs separated
  • 100 grams dark chocolate

To garnish:

  • 2 cups (500 grams) whipping cream sweetened
  • 2 tablespoons (20 grams) vanilla sugar (I put half because I like less sweet, your choice)

Instructions

Prepare the meringue:

  • 1. Heat the oven to 250F (120C) degrees.

  • 2. Beat the egg whites until very stable, and arrange in a circle (the size of your cake), on a baking sheet lined with greased parchment paper. Bake for about an hour and a half until lightly golden.

Prepare the cream:

  • 3. Melt the chocolate and butter in a bain-marie or in the microwave. Add cognac and egg yolks and mix well until combined.

  • 4. Beat the egg whites to stiff peaks and fold into the chocolate mixture until combined.

  • 5. Spread the chocolate cream evenly over the meringue and refrigerate for two hours.

To garnish:

  • 6. Whip the cream until firm, spread on the cake, wrap in plastic wrap and put in the freezer for three hours. Then transfer to the refrigerator and serve.
