Moroccan Green Fava Bean Stew

A simple fresh green fava bean stew that heralds the arrival of spring

Green fava bean stew with fresh favas, which are one of my favorite ingredients. The magnificent flowering of the stalk marks the arrival of the most beautiful season of the year, and always brings me back home, to my grandparents’ garden. Sitting and cleaning the beans with grandma is a memory that will accompany me forever.

Ingredients for Green Fava Bean Stew

  • 1/2 cup oil
  • 1 head garlic unpeeled
  • 5 garlic cloves whole, peeled
  • 1 tablespoon paprika
  • 1/2 teaspoon turmeric
  • 1 teaspoon Salt or to taste
  • 7 dried chili pepper
  • 1/2 tablespoon tomato paste
  • 2 cups boiling water
  • 2.2 lbs (1 kilogram) green fava beans Peeled from pods (weight before peeling; small pods can be left unpeeled)
  • 1/2 bunch cilantro leaves only, chopped

Instructions

  • 1. Heat oil in a pot and fry two types of garlic for half a minute, while stirring, until golden. Season, add the chili pepper and tomato paste and mix. Add boiling water, favas and coriander, mix, cover and bring to a boil. Lower the heat and cook for about half an hour until the beans have softened. Remove the lid and continue cooking for another 20 minutes to reduce the sauce.

  • 2. Remove from the flame and serve immediately.
