Mamaliga (Romanian Polenta)

Mamaliga makes the perfect side dish or bed for any main course. You can easily convert it from a vegan dish to a dairy dish and serve it on holidays.

The recipe below is vegan, for the dairy version: replace one cup of the water with a cup of milk, add a tablespoon of melted butter to the finished product, crumble a handful of rich Bulgarian cheese and/or a handful of grated Kashkaval, mix gently and place a dollop of sour cream on top.

Ingredients for Mamaliga

  • 1 quart (4 cups) water
  • 1 teaspoon Salt
  • 1 cup cornmeal

Instructions

  • 1. Boil the water with the salt. Lower to a medium heat and gradually add the cornmeal to the pot, stirring briskly with a whisk. Continue cooking for about 7 minutes, whisking continuously, until a homogeneous mixture forms. If the mamaliga is too bubbly, lower the flame.

  • 2. For the dairy version, serve with crumbled feta cheese and sour cream.
