Gosh-e Fil – Persian Haman’s Ears

Gosh-e Fil are fried pastry rounds pinched to resemble elephant ears. The Persian Jews adopted them and turned it into their version of Haman's Ears

The Persian name Gosh-e Fil literally translates to “Elephant ears” and it’s no wonder since these dough rounds get pinched into the shape of an ear before being fried in oil. Found in both Persian and Afghani cuisine, this sweet, crispy treat is dusted with confectioner’s sugar and sprinkled with pistachio and usually served with tea during Ramadan or Nowruz, the Persian New Year. They are so terribly delicious that the Jewish community adopted them for Purim in yet another attempt to gobble up the evil Haman’s ears.

Ingredients for Gosh-e Fil

  • 1¾ cups (210 grams) flour sifted
  • 2 eggs
  • 1¾ tablespoons (25 grams) oil
  • 1 teaspoon whiskey or vodka or any other alcohol of preference
  • 1 teaspoon ground cardamom
  • oil for frying

To garnish:

  • confectioner's sugar
  • pistachio nuts chopped

Instructions

Prepare the dough:

  • 1. In the bowl of a stand mixer fitted with the dough hook attachment, mix together all the dough ingredients until  smooth and flexible. You can also knead by hand.

  • 2. Divide the dough into 4 balls.

  • 3. Roll the dough out on a well floured surface to a thickness of about 1/8 inch (2-3 mm) at the thickest, and as thin as possible without tearing the dough.

Assemble and bake:

  • 4. With a glass or a cookie/biscuit cutter, cut out rounds with a diameter of 2-2⅓ inches (5-6 cm).

  • 5. Pinch and fold a little on one side of the circle to form what looks like the stem part of a small floret, or the base of an elephant's ear.

  • 6. Heat the oil in a large frying pan to 330F (165C) degrees. Fry each side until lightly golden, not too dark. Less than a minute per side.

  • 7. Dust each side with confectioner's sugar and sprinkle with chopped pistachios.
