Date Cookies (Roulade)

"Shavuot of Longing" shares the favorite date cookies of Inbar Hayman (z"l), as a dish to prepare and honor her memory.

Inbar Hayman (z”l)’s Favorite Recipe: Affectionately known as “Pink,” Inbar was a devoted art enthusiast and graffiti artist. She was a passionate supporter of Maccabi Haifa FC and a charming young woman, full of love and overflowing with endless generosity. Inbar was creative and brimming with the joys of life.

Ingredients for Date Cookies

For the dough:

  • 2½ cups flour
  • 1 tablespoon baking powder
  • 7 oz (200 grams) butter room temperature, cut into cubes
  • 7 oz (200 ml) sour cream 15% fat

For the filling:

  • 12 oz (340 grams) date spread (also called date paste in health food store and in the organic section of select supermarkets)
  • 1/3 cup raw tahini
  • 1 cup almonds or walnuts, chopped
  • confectioner's sugar for finishing

Instructions

Prepare the dough:

  • 1. In the bowl of a stand mixer fitted with the paddle attachment, mix the flour, baking powder, and butter into a flaky mass. Add the sour cream and continue mixing until smooth. Shape the dough into a ball, wrap with plastic wrap and place in the refrigerator for 20 minutes.

  • 2. Preheat the oven to 350F (180C). Line a baking sheet with parchment paper.

  • 3. Take the dough out of the refrigerator and divide into 4 parts.

Roll out and assemble:

  • 4. Lightly flour a work surface and roll the dough to a thickness of 0.1 inch (3mm).

  • 5. Spread a generous amount of the date spread on the dough, then drizzle the tahini paste on top. Evenly spread the tahini. Add the crushed almonds, gently pressing them into the mixture.

  • 6. Roll the dough into a log and transfer to the prepared baking sheet. Repeat the process with the remaining dough and ingredients.

  • 7. Bake the roulades for 25-35 minutes or until they are golden brown. Remove from the oven and let cool at room temperature.

  • 8. Using a sharp knife, slice the roulade into 1-inch thick pieces. Dust the cookies with confectioners' (powdered or icing) sugar.

  • 9. Store in a sealed airtight container.
