Classic Crumb Cheesecake

A no-bake crumb cheesecake is a great recipe to have in your repertoire. This recipe is Tal Shoham's favorite

Ingredients for Crumb Cheesecake

For the crust and crumble:

  • 1½ cups flour
  • 1 teaspoon baking powder
  • 1/4 cup Sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup (1¼ sticks) butter unsalted, cold and cut into cubes
  • 3 egg yolks

Cheese filling:

  • 17 oz (500 grams) farmer's cheese
  • 9 oz (250 grams) cream cheese lite
  • 3 oz (80 grams) Sugar
  • 4 tablespoons (40 grams) Vanilla Instant Pudding
  • 17 oz (500 grams) whipping cream

Instructions

Prepare the crust and crumble:

  • 1. Preheat the oven to 350F (180C) degrees.

  • 2. In a food processor mix the flour, baking powder, sugar, vanilla extract and butter together until it resembles coarse crumbs. Add the egg yolks and pulse until a dough is just formed.

  • 3. Press around half of the mixture into a 10" (26 cm) springform pan lined with parchment paper.

  • 4. In a separate parchment lined pan, press the remaining dough into a 1/2-inch thick layer (the size of the pan is unimportant since this will end up as crumble).

  • 5. Bake both pans for about 20 minutes, until golden. Set aside to cool completely.

Prepare the filling:

  • 6. In the bowl of a stand mixer fitted with the whisk attachment, add the cream cheese, farmer's cheese, sugar, instant pudding, and whipping cream and mix well.

  • 7. Pour the filling over the crust and even out the surface.

  • 8. Crumble up the other half of the crumb mixture with your fingers. Gently and evenly sprinkle the crumble on top of the cheese filling.

  • 9. Refrigerate at least 4 hours until the filling sets. Serve cold.
