Cheese Rolls (Boyikos)

This recipe is for the Greek rolls that I grew up with.

Ingredients for Cheese Rolls

  • 14 ounces (400 grams) sheep feta cheese
  • 2 ounces (60 grams) kashkaval cheese
  • 1.8 ounces (50 grams) parmesan cheese
  • 5.3 ounces (150 grams) hard yellow cheese
  • 1.1 pounds (100 grams)
  • 4¼ cups (600 grams) flour
  • 3 tablespoons (30 grams) baking powder
  • 5 eggs
  • 7 ounces (200 grams) butter melted

Instructions

  • 1. Grate all of the hard cheeses into a large bowl. Add the remaining ingredients and mix until smooth.

  • 2. Heat the oven to 390F/200ºC. Carve uniform balls out of the dough, weighing 1-2½ ounces (30-70 grams). Line a baking pan with parchment paper and bake for about 20 minutes until the rolls are golden brown.
