Cheese and Zucchini Pie

This cheese and zucchini pie is a great standby dish that is perfect for Shavuot but can also be made for Passover without any additional headache

This Turkish cheese and zucchini pie is an excellent dish for Passover, though it’s delicious all year round. Sephardic cuisine (which spread to Turkey, Greece, the Balkans, and many other areas as well) has dozens of recipes which utilize zucchini and cheese.

It is recommended to use zucchini, which has a more pronounced taste and is less watery than the summer squash varieties that are sometimes substituted. Grate the zucchini coarsely for a quiche with an al dente bite, or thinly for a completely soft texture. In either case it is important to squeeze out a good amount of excess moisture from the zucchini after grating.

Ingredients for Cheese and Zucchini Pie

To grease the dish:

  • 1 tablespoon olive oil
  • 2 tablespoons breadcrumbs or matzo flour

For the filling:

  • 5 zucchinis Large or 7 medium, coarsely or finely grated and well drained
  • 4.25 oz (120 grams) Bulgarian cheese coarsely crumbled
  • 7 oz (200 grams) mozzarella coarsely grated
  • 8.8 oz (250 grams) cottage cheese
  • 3 eggs
  • 1/3 cups breadcrumbs or matzo flour

For the topping:

  • 3.5 oz (100 grams) mozzarella coarsely grated

Instructions

  • 1. Heat the oven to 355F (180C) degrees. Grease the entire baking dish and coat well with breadcrumbs or matzo flour.

  • 2. In a bowl, mix all the ingredients together.

  • 3. Spread the mixture in the prepared dish and sprinkle evenly with mozzarella cheese.

  • 4. Bake for 35-40 minutes until the top is golden. Remove from the oven and set aside to cool for about 10 minutes before slicing.

  • 5. Serve hot. Keep covered in the refrigerator for up to 3 days. To reheat before serving, heat for a few minutes in the oven at 335F (170C) degrees.
