Caveos di Aman – Haman’s Hair Pasta

The Bulgarians have their own special savory way to exact revenge on evil Haman with their delicious Caveos di Aman (Haman's hair)

Instead of baking, rolling out and stuffing various pockets of dough, the Bulgarians found a simple and delicious way to exact revenge on the evil Haman – they make a salad with long, thin noodles, which symbolize Haman’s hair. Hard-boiled eggs and olives – round foods that symbolize the cycle of life – are added to the pasta which is seasoned with a little lemon. Purim or not, this is a wonderful dish for a picnic, which can be dressed up with additional toppings like cheese, anchovies, herbs and vegetables (and if you really want, you can invent some kind of hidden symbolism for them as well).

Ingredients for Caveos di Aman

  • 1 pacakage spaghettini
  • 6 tablespoons olive oil
  • 1/2 container parsley finely chopped
  • 1/2 container oregano finely chopped
  • 1/2 container chives finely chopped
  • 4 garlic cloves chopped
  • 5 eggs
  • Salt to taste
  • ground black pepper to taste
  • 7.5 oz (215 grams) olives mixed green and black, pitted

Instructions

  • 1. Cook the spaghettini according to the manufacturer's instructions

  • 2. Hard-boil the eggs: place the eggs in a medium pot and bring water to a boil. Cook the eggs for 9 minutes. Remove the eggs from the pot and place in ice cold water bath to cool.

  • 3. In a large pan, heat 6 tablespoons of oil and add the 4 chopped garlic cloves, and herbs (reserve a handful of each for serving).

  • 4. Add the olives and the cooked spaghettini to the pan and mix until the spaghetti is coated with the oil and spice mixture. Transfer the pasta to a serving dish.

  • 5. To serve, sprinkle the pasta with the rest of the reserved herbs. Cut the hard-boiled eggs in half and arrange on top.
