Ingredients for Blini's
For the Blini:
- 1½ cups milk
- 7 tablespoons flour
- pinch Salt
- 2 teaspoons Sugar
- 1 teaspoon baking powder
- 3 eggs
- 1 teaspoon lemon juice סחוט
- 1 cup water hot
- 1 teaspoon vegetable oil or any other neutral oil
- butter softened, or clarified butter for frying
For the Topping:
- 7 oz (200 grams) sour grapes or crème fraîche
- 7 oz (200 grams) red caviar or salmon roe
Instructions

1. In a bowl, mix the dry ingredients together. Add the wet ingredients and mix well until uniform.

2. Transfer the blini batter to a plastic squeeze bottle, or a soda bottle with a hole cut into the top. Heat butter in a pan and squeeze out a little of the batter to create a small pancake. Fry the bellini on both sides until golden.

3. Put a little sour cream (or crème fraîche) and red caviar on each blini.
