Blini’s with Sour Cream and Red Caviar

The Blini is French, but was adopted into the Russian culinary tradition in the days when the French aristocracy and its cuisine were in vogue. They are a clear symbol of the Russian New Year - no holiday table is complete without them

Ingredients for Blini's

For the Blini:

  • 1½ cups milk
  • 7 tablespoons flour
  • pinch Salt
  • 2 teaspoons Sugar
  • 1 teaspoon baking powder
  • 3 eggs
  • 1 teaspoon lemon juice סחוט
  • 1 cup water hot
  • 1 teaspoon vegetable oil or any other neutral oil
  • butter softened, or clarified butter for frying

For the Topping:

  • 7 oz (200 grams) sour grapes or crème fraîche
  • 7 oz (200 grams) red caviar or salmon roe

Instructions

  • 1. In a bowl, mix the dry ingredients together. Add the wet ingredients and mix well until uniform.

  • 2. Transfer the blini batter to a plastic squeeze bottle, or a soda bottle with a hole cut into the top. Heat butter in a pan and squeeze out a little of the batter to create a small pancake. Fry the bellini on both sides until golden.

  • 3. Put a little sour cream (or crème fraîche) and red caviar on each blini.
