Bishbash – North African Fennel Salad

Bishbash is a North African fennel salad that can be found in the kitchens of Tunisian, Libyan and Moroccan Jewish communities.

Bishbash is a fennel salad usually served as an appetizer before rich and heavy meals featuring couscous or meat, or alternatively as a fresh side dish at lunch. It is especially advisable to use soft, small and young fennel heads as their taste is sweeter and their texture more delicate.

Ingredients for Bishbash - Fennel Salad

  • 5 fennel young heads small or medium sized
  • 1 lemon juiced
  • 1 teaspoon Salt
  • 2 tablespoons olive oil
  • 2 tablespoons dill leaves chopped, or fennel fronds


  • 1. Slice fennels vertically, as thinly as possible. Place in a large mixing bowl and mix with the rest of the ingredients. Allow the flavors to soak in for 10 minutes before serving. Serve lukewarm or cold.
