Biscuit Layer Cake

"Shavuot of Longing" lists this simple Israeli classic as Eden Yerushalmi's favorite, and encourages us to make it and think of her this holiday.

Ingredients for Biscuit Layer Cake

For the biscuit layer:

  • 7 oz (200 grams) Petit-Beurre vanilla flavored
  • 3.5 oz (100 grams) Petit-Beurre chocolate flavored
  • 1/2 cup milk

For the cream:

  • 8 oz (250 ml) whipping cream 38%
  • 1/2 cup milk
  • 3 oz (80 grams) Vanilla Instant Pudding
  • 3 tablespoons Sugar
  • 7 oz (200 grams) sour cream
  • 8 oz (250 grams) 9% white cheese (similar to cream cheese)

For the topping:

  • 4 squares milk chocolate (or dark if you prefer)

Instructions

Prepare the cream filling:

  • 1. Whip together the cream, milk, instant pudding, and sugar until a smooth mixture is formed. Add the sour cream and cream cheese and mix well.

Assemble:

  • 2. In a 12" x 10" (25x30 cm) dish, arrange a layer of the vanilla cookies and brush lightly with milk.

  • 3. Add approximately 1/3 of the mixture and spread into an even layer.

  • 4. Add another layer of cookies, this time using the chocolate flavored ones, and brush with milk.

  • 5. Add another 1/3 of the filling and spread into an even layer.

  • 6. Repeat the process with an additional layer of vanilla cookies and filling.

  • 7. Grate chocolate over the last layer of cream and place the cake in the refrigerator for 6 hours to chill. Serve cold.
