Baqlajon– Bukharan Eggplant Salad

A mezze type salad/dip that's really easy to make and filled with the strong flavors of roasted eggplant and pungent garlic

Baqlajon means eggplant in Bukharian, so it is a bit misleading to describe this tangy roasted eggplant salad. Flavored with fresh lemon and garlic, it’s a close cousin to the more well-known baba ghanoush.

Ingredients for Baqlajon - Bukharan Eggplant Salad

  • 2 eggplants medium-sized, cut in half lengthwise
  • 2 garlic cloves crushed
  • 2 teaspoons lemon juice
  • Salt

Instructions

  • 1. Heat a nonstick pan and add the eggplants to the pan cut side up. Cover and roast for 15-20 minutes until softened. Set aside to cool.

  • 2. Using a teaspoon, remove the meat from the eggplants and transfer to a bowl. Season with garlic, lemon juice and salt and mix together. The salad can be kept in the refrigerator for up to 4 days.
