Baqlajon means eggplant in Bukharian, so it is a bit misleading to describe this tangy roasted eggplant salad. Flavored with fresh lemon and garlic, it’s a close cousin to the more well-known baba ghanoush.
Ingredients for Baqlajon - Bukharan Eggplant Salad
- 2 eggplants medium-sized, cut in half lengthwise
- 2 garlic cloves crushed
- 2 teaspoons lemon juice
1. Heat a nonstick pan and add the eggplants to the pan cut side up. Cover and roast for 15-20 minutes until softened. Set aside to cool.
2. Using a teaspoon, remove the meat from the eggplants and transfer to a bowl. Season with garlic, lemon juice and salt and mix together. The salad can be kept in the refrigerator for up to 4 days.
