Dr. Hélène Jawhara Piñer, professor and PhD in medieval history and history of food, cook, and award-winning cookbook author of “Sephardi”, joins the “ANU Together” series for this special online event. Hélène shares her recipe and the story behind Toledan muğabbana (from the Arabic word ğban which means cheese)- baked cheese pies that are similar to empanadas and can trace their history to Medieval times. Want to make Muğabbana with Hélène during the workshop? Make sure you have the following:

1. The ingredients which can be found in the recipe here.

2. One portion of dough prepared and chilled 30 minutes prior to the workshop according to the instructions in the recipe.

3. Measuring cups and spoons.

4. Plastic wrap (to cover the dough).

5. A rolling pin.

6. A circular cookie cutter or glass roughly 3” (7.5 cm) in diameter.

7. 1-2 baking sheets lined with parchment paper.

8. A pastry brush (silicone or otherwise) for egg washing.
