Ravikos – Spinach Stalk Stew

Ravikos is a quick and sour spinach stalk stew, which uses the stalks left over from making spinach pastries

Shiri Embram, Mary’s daughter says: “Our mother Mary would not throw anything away! She used every raw material competely. When she would make Spinach Bormuelos for Passover or any other spinach recipe, she would save the spinach stalks and make Ravikos from them.

Ravikos is actually a very quick and sour spinach stew that is prepared in a few minutes in a pot. We usually serve it as part of the meze salads at the beginning of the meal.

Ingredients for Ravikos

  • 3 cups spinach (stems only)
  • 3 tablespoons oil
  • 3 tablespoons lemon juice freshly squeezed
  • Salt
  • 1/4 cup water


  • 1. Wash the spinach stalks well and chop finely.

  • 2. Heat a flat pot with oil, water, lemon juice and salt and bring to a boil.

  • 3. Add spinach stalks and cook in a covered pot for 15 minutes until softened.
