Lachshu – Moroccan Penicillin Soup

This soup banishes every microbe and virus- the Moroccan equivalent of the Ashkenazi chicken soup - every sect has its weapon against winter ailments

This soup is linked in my family to the story of Rina, my great-grandmother from Morocco, whose husband sued for a divorce from her because when he got sick, Rina procrastinated and did not make him this healing soup in time

Ingredients for Lachshu - Moroccan soup

  • 1¼ cups semolina (you can use whole wheat if you want)
  • 4½ cups water or chicken or vegetable stock
  • 1 tablespoon Chicken soup powder (optional)
  • 1 nice teaspoon turmeric
  • ½ teaspoon ground black pepper
  • Salt to taste
  • 1 head garlic cloves peeled and finely chopped (at least 10 garlic cloves)
  • 1 large bunch cilantro leaves only, chopped

Instructions

  • 1. Pour water or soup into a pot and add semolina, turmeric, soup powder, salt and black pepper.

  • 2. Cook while stirring until a thick paste is formed and the semolina is soft.

  • 3. Turn off the heat and add chopped (raw) garlic and chopped coriander to the pot. Stir and taste. If needed, add salt.

  • 4. Pour into a large glass with a handle and sip with pleasure.
