Green Fava Bean Stew

Green Fava Bean stew was one of the dishes that Shlomo Bozo used to cook, which was one of his family's Passover dishes

How do you know that Passover is approaching? There are green fava beans in the market. Tali, Shlomo’s daughter, tells about her father’s green fava stew: “Dad was active at home, almost every week he shopped at the Mahane Yehuda market and even cooked occasionally. One of his favorites was green fava stew. We sometimes ate the favas with sour cream.”

Ingredients for Green Fava Stew

  • 2.2 lbs (1 kilogram) green fava beans Cleaned of "hairs", cut and washed
  • 3 tablespoons oil
  • Salt to taste
  • ground black pepper to taste
  • 1 tablespoon Sugar


  • 1. Open the pods and leave only the beans.

  • 2. Saute the beans in a pot with oil, and after 5-10 minutes add salt, pepper, sugar and a little water.

  • 3. Cook for half an hour to an hour on low heat.

Within the book are recipes of the dear residents of the nursing home “Views of Jerusalem” together with select recipes from the menu served in the home. The book was written out of respect, recognition and appreciation for the residents, and the memories that were woven around food over the years.
