Bourekitas de muez – small, sweet nut filled bourekas

Bourekitas de Muez - sweet bourekas - are a lovely dessert from Sephardic-Greek cuisine, filled with nuts and cooked in simple syrup

Bourekas are pastries made from a variety of different doughs filled with any number of savory or sweet fillings. They originate from the Ottoman Empire. The Sephardic Jews from Turkey and the Balkans brought the dish to Israeli cuisine.

These small, sweet bourekitas in Greek-Sephardic cuisine are called “Bourekitas de muez” which means bourekitas with nuts. Among Turkish expats, they are known as “travados” which means: pullers. It is believed that they are so named because after they are cooked in simple syrup, they are “pulled” out onto the serving plate.

Ingredients for bourekitas de muez

For the dough:

  • 1 cup oil
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1.1 lbs (500 grams) flour
  • 1/2 teaspoon Salt
  • 4 tablespoons Sugar
  • 1 tablespoon cinnamon

For the filling:

  • 10.6 oz (300 grams) walnuts chopped
  • 1/3 cup Sugar
  • 2 tablespoons cinnamon
  • 2 tablespoons water

For the syrup:

  • 1 cup honey
  • 1 cup Sugar
  • 1 tablespoon lemon juice
  • 3 cups water
  • 1 tablespoon cinnamon

Instructions

  • 1. Mix the oil, water and lemon juice. Add the flour, salt, sugar and cinnamon and knead into a smooth dough.

  • 2. Roll the dough out to a thickness of about 1/4 inch (half a cm).

  • 3. Cut out rounds using a cookie cutter or a glass with a diameter of 2" (5 cm).

  • 4. Mix the filling ingredients together.

  • 5. Using a small teaspoon, put a little stuffing in the center of one dough round.

  • 6. Fold in half to create a half moon shape, and seal the edges.

  • 7. Heat an oven to medium heat (355F/180 degrees).

  • 8. Line a baking sheet with parchment paper and arrange the bourekitas on top.

  • 9. Bake for about 25 minutes until golden brown.

  • 10. Put all the syrup ingredients in a large pot and cook for 10 minutes.

  • 11. Put the baked bourekitas into the pot and cook for about 5 minutes. You can keep the bourekitas in the syrup until serving, or drain and keep in a separate box.
